Preheat Your Oven: Set your oven to 375°F (190°C).
Prepare the Sweet Potatoes: Boil the cubed sweet potatoes in a pot of water until tender, about 15 minutes. Drain and mash until smooth. Let them cool slightly.
In a large mixing bowl, combine the mashed sweet potatoes, grated ginger, brown sugar, heavy cream, eggs, cinnamon, nutmeg, cloves, salt, and vanilla extract. Mix until everything is well blended and smooth.
Roll out your pie crust and fit it into a tart pan. Pour the sweet potato mixture into the crust, spreading it out evenly.
Place the tart in the oven and bake for 40-45 minutes until the filling is set and the crust is golden brown.
Let the tart cool on a wire rack before slicing. Serve at room temperature or chilled, optionally with a dollop of whipped cream or a sprinkle of powdered sugar.
