Ingredients
  

  • 1 pre-made pie crust (or homemade if preferred)
  • 2 medium sweet potatoes, peeled and cubed
  • 1/4 cup fresh ginger, finely grated
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Preheat Your Oven: Set your oven to 375°F (190°C).
  • Prepare the Sweet Potatoes: Boil the cubed sweet potatoes in a pot of water until tender, about 15 minutes. Drain and mash until smooth. Let them cool slightly.
  • In a large mixing bowl, combine the mashed sweet potatoes, grated ginger, brown sugar, heavy cream, eggs, cinnamon, nutmeg, cloves, salt, and vanilla extract. Mix until everything is well blended and smooth.
  • Roll out your pie crust and fit it into a tart pan. Pour the sweet potato mixture into the crust, spreading it out evenly.
  • Place the tart in the oven and bake for 40-45 minutes until the filling is set and the crust is golden brown.
  • Let the tart cool on a wire rack before slicing. Serve at room temperature or chilled, optionally with a dollop of whipped cream or a sprinkle of powdered sugar.
