- 200g Yaki Soba noodles
- 1 block firm tofu, drained and cut into cubes
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon mirin (Japanese sweet rice wine)
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Sesame seeds and sliced green onions for garnish
Cook the Yaki Soba noodles according to package instructions. Drain and set aside.
Cook Tofu: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
Stir-fry Veggies: In the same skillet, add the sliced onions and garlic. Stir-fry for 2-3 minutes until fragrant. Add the bell peppers and mushrooms, and cook until they’re tender-crisp.
Add the cooked noodles and tofu back into the skillet. Pour in the soy sauce, oyster sauce, and mirin. Toss everything together until well combined and heated through.
Season with salt and pepper to taste. Garnish with sesame seeds and sliced green onions.
