Yaki Soba Noodles

Ingredients
  

  • 200g Yaki Soba noodles
  • 1 block firm tofu, drained and cut into cubes
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste
  • Sesame seeds and sliced green onions for garnish

Instructions
 

  • Cook the Yaki Soba noodles according to package instructions. Drain and set aside.
  • Cook Tofu: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
  • Stir-fry Veggies: In the same skillet, add the sliced onions and garlic. Stir-fry for 2-3 minutes until fragrant. Add the bell peppers and mushrooms, and cook until they’re tender-crisp.
  • Add the cooked noodles and tofu back into the skillet. Pour in the soy sauce, oyster sauce, and mirin. Toss everything together until well combined and heated through.
  • Season with salt and pepper to taste. Garnish with sesame seeds and sliced green onions.
